- Preheat the oven to 180°C.

 - In a bowl, whisk the eggs and mix with grated carrot, zucchini, and potatoes.
 - Add the cheese mixture (parmesan, pecorino, and formagg) to the bowl and mix well.
 - Brush the pastry with the egg mixture and arrange the zucchini and eggplant slices on top.
 - Season with salt, pepper, and prezzemolo, and finish with a sprinkle of parmesan cheese.
 - Bake for 35-40 minutes or until the pastry is golden brown.
