- Preheating the oven to 200°C, season the chicken breasts with salt, pepper and a pinch of cumin.
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and cook until it’s translucent.
- Add the grated ginger and cook for another minute.
- Add the chicken breasts and cook until they’re browned on both sides.
- In a small bowl, mix the curry powder with a little water to make a paste. Add the paste to the pan and cook for 1-2 minutes.
- Add the anise seeds, cayenne pepper and a pinch of salt. Stir well to combine.
- Remove the pan from the heat and let it cool slightly. Stir in the yogurt to smooth out the sauce.
- Transfer the chicken to a baking dish, spoon the curry sauce over the top and bake for 20-25 minutes or until the chicken is cooked through.
- Remove from the oven and let it rest for a few minutes before serving.
