- Cook the bigoli pasta according to package instructions, then set aside.
- In a large pan, melt 4 tablespoons of butter over medium heat.
- Add 1 tablespoon of cinnamon and 1 pinch of nutmeg, and cook for 1 minute, stirring constantly.
- Add 1/2 cup of chopped hazelnuts and cook for 2-3 minutes, or until fragrant and lightly toasted.
- Add 1 tablespoon of breadcrumbs and cook for 1-2 minutes, stirring constantly, until golden brown.
- Drain the bigoli pasta and add it to the pan with the hazelnut mixture. Toss everything together with 1 tablespoon of olive oil, salt, and pepper to taste.
- Serve warm, garnished with additional chopped hazelnuts if desired.
