Preparazione
- Preheat the oven to 180°C. Cook the potatoes until they’re tender, then peel and mash them.
- In a mixing bowl, combine the mashed potatoes, ricotta, egg, salt, and a pinch of nutmeg. Mix well to combine.
- In a separate bowl, prepare the filling by mixing together the biscuits, hazelnuts, and a pinch of cinnamon.
- Roll out the dough to a thickness of about 3 mm. Cut out circles of dough using a cookie cutter or the rim of a glass.
- Place a spoonful of the filling in the center of each dough circle. Fold the dough over the filling to form a half-moon shape and press the edges together to seal.
- Bring a large pot of salted water to a boil and cook the ravioli for 3-5 minutes, or until they float to the surface.
- Serve the cjarsons with a drizzle of honey and a sprinkle of powdered sugar, or with a sauce of your choice.
