Procedimento
- Cook the bucatini according to the package instructions until al dente.
- In a separate pot, heat the besciamella with a little milk until it reaches a creamy consistency.
- In a pan with a little olive oil, cook the prosciutto cotto until crispy.
- Add the cooked bucatini to the pan with the prosciutto cotto and toss to combine.
- Add the cooked pasta to the besciamella and mix well.
- Add the piselli, pepe nero macinato and salt to taste, then mix gently.
- Prepare a layer of dough (pastella) with a thickness of about 0.5 cm.
- Seal the edges of the square by pressing them with your fingers.
- Fry the frittatine in hot oil until golden brown, then remove and drain on paper towels.
- Sprinkle with grated Parmigiano before serving.
