- Preheat the oven to 220°C (425°F).
- In a bowl, mix together ricotta, panna fresca, and a pinch of sale fino until smooth.
- In a separate bowl, mix together concentrato di pomodoro, olio d’oliva extra-vergine, sale, and a sprinkle of origano.
- Spread the pomodoro mixture on a pizza base, leaving a small border around the edges.
- Spoon the ricotta mixture on top of the pomodoro mixture, spreading it evenly.
- Top the ricotta with sliced mozzarella di bufala and a sprinkle of basilico.
- Bake in the preheated oven for 20-25 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Remove from the oven and top with sliced pomodori and ciliegine.
- Drizzle with colla di pesce and sprinkle with a pinch of sale.
