- Preheat the oven to 180°C. Cut the eggplant, zucchini, and bell peppers into thick slices and brush with extra-virgin olive oil. Grill the slices on a charcoal grill or under the broiler until they are tender and slightly charred.
- Meanwhile, cook the prosciutto in a pan with a little bit of olive oil until crispy, then chop it into small pieces.
- Slice the mozzarella into thin strips and set it aside.
- In a large bowl, mix together the grilled vegetables, prosciutto, and mozzarella.
- In a separate bowl, mix together the grated Parmesan and chopped fresh herbs from Provence.
- In a 9×13 inch baking dish, create a layer of a tomato sauce, followed by a layer of the vegetable and prosciutto mixture, a layer of the Parmesan and herb mixture, and a layer of lasagna noodles. Repeat this process until all the ingredients are used up, ending with a layer of cheese on top.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is golden brown and bubbly.
