Per preparare i Madeleine i biscotti morbidi decantati da Proust, seguirai i passaggi seguenti:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the grated zest of 2 oranges and the juice of 1 orange.
- Add the flour mixture to the wet ingredients and stir until just combined. Do not overmix.
- Add the vanilla extract and mix until smooth.
- Pour the batter into a piping bag fitted with a round tip. Pipe small, round circles onto the prepared baking sheet, leaving about 1 inch (2.5 cm) of space between each Madeleine.
