- Preheat the oven to 180°C.
- Cook the polenta according to package instructions.
- In a pan, heat the oil and cook the pancetta and pancetta affumicata until crispy.
- Add the radicchio to the pan and cook until wilted.
- In a large bowl, combine the cooked polenta, radicchio and pancetta mixture, and grated parmigiano and provola cheese.
- Season with salt to taste.
- Transfer the mixture to a baking dish and top with additional grated cheese.
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
